Our land      Michele Satta Loc. Vigna Al Cavaliere 61 57022 Castagneto Carducci (LI)

The terroir, with its unforeseeable beauty is a gift we receive daily. With my hands I can touch the mystery of a past made of history and of a present made of daily life that continuously generates. My land is located in the Doc of Bolgheri, in Castagneto, where the hills encounter the plain.

The soil of our vineyards, located close to the hill, was made, thanks to the superimposition  of detritus carried by torrential rains and by sea-sediments over a billion  years.   We have therefore a richness in mineral components from the Metalliferous Hills that gives, particularly in Summer time, freshness and deepness to cultivation.
I choose the number and position of buds with manual pruning carried out  in different ways according to the  varieties.  it is fundamental to allow for the air flow to arrive into the nucleus of the bunch by allowing for the correct structure of the   exterior leaves.  and catch the sun and the light avoiding mass of leaves and allowing the air flow particularly in the zone of grapes.   In order to favour  the vegetative activity during the hot months I also work the soil and break up the superficial crust to stimulate the roots. I harvest at full maturation with repeated passages.

 At the cellar I use refrigeration to control temperatures of fermentation in the whites and to decanter musts and for the reds I privilege fermentation in wooden barrels  with batonage. Red wines stay at least one year in barriques or in oak barrels and are bottled without filtration.
